Blueberry Simple Syrup (made healthier!)
Ingredients:
1 ½ C blueberries – fresh or frozen
1 C water
½ C honey
Instructions:
Combine blueberries, water, and honey in a saucepan over medium heat.
Bring to a low simmer and cook until honey is dissolved and blueberries burst open, about 5-8 minutes.
Place a fine mesh sieve over a large bowl, pour in the syrup and blueberries. Mash blueberries with the back of a spoon to release all the liquid.
Allow syrup to cool completely.
Store in a glass bottle or jar in the refrigerator for up to 2 weeks. Makes about 1 ½ cups of syrup.
Notes:
Add to soda water for a tasty soda replacement. For an Italian soda, add a splash of ½ & ½ or cream to the top. Make it a mocktail by fancying it up with a sprig of mint and a squeeze of lemon or lime.
Don’t throw away the leftover blueberry pulp! It’s delicious added to yogurt, cottage cheese, oatmeal, or a smoothie. It’s even thick enough to use as a jam replacement.
