Sheet-Pan Chicken with Roasted Fall Veggies…Cook Once, Eat Twice!

This cozy, sheet-pan meal is your new weeknight hero. Packed with seasonal fall veggies like cauliflower and butternut squash, it's spiced with warming turmeric, cinnamon, and cumin for that perfect autumn comfort. Blueberry Simple Syrup (made healthier!)

When it comes to eating (and drinking) well, it’s easy to overlook what’s in your glass. Even “healthy” options like 100% juice are packed with sugar. Most days I stick with water and electrolytes (I love LMNT), but every once in a while I want something a little more fun. Kombucha or Poppi can be nice treats, but they can be pricey and honestly, they don’t always hit the spot.

So, I started playing around with fruit syrups. Traditional simple syrup calls for equal parts fruit, water, and sugar, but I gave mine a healthier twist: extra blueberries, honey instead of sugar, and half the usual sweetener. The result? A thick, blueberry forward syrup with just the right touch of sweetness.

As a bonus, blueberries are loaded with antioxidants, and honey brings its own anti-inflammatory and antibacterial benefits. So yes - you can have your “soda” and still feel good about drinking it! This recipe also works beautifully with any berries or even cherries, so feel free to mix it up.

Game Day Eats

Football season is officially upon us which often means watching parties and lots of yummy but not so healthy snacking options. Staying on track with a clean lifestyle can be challenging when presented with a smorgasbord of “naughty nibbles”. You can eat before you go to the party, but in my experience that doesn’t always ensure I’ll be able to resist temptation. So, my solution is to bring healthier party fare, that way I can nosh to my hearts content. Here are two of my favorite game day eats. Other good options are homemade chili, a veggie tray with hummus, grass fed cheese & gluten free crackers or some rainbow fruit skewers. Go [insert your team here]!

Cinnamon Vanilla Granola

Granola has gotten a bad rap. That’s because most store bought granolas contain a ton of sugar and inflammatory seed oils, making them no better than most of the junk in the cereal aisle. There are some high-quality commercial granolas available but I find them pricey for the amount in the bag. My solution is to make my own, it’s actually super easy and it makes a lot at a fraction of the cost of store bought. Usually I enjoy a small amount to add crunch to yogurt or as a topping on some fruit & peanut butter, but sometimes I like to snack on the bigger chunks if I’m craving something sweet!

How to make a salad you actually want to eat!

I love a good salad but just having some lettuce with the same old toppings and dressing can get boring. So, I really try to mix it up and get creative when I plan and put together a salad. I also find it can be helpful to borrow salad ideas from restaurant menus to inspire me as well. This way, I keep it interesting but save a ton of money and control the ingredients when I make my salads at home!
